Parmesan Zucchini Chips

Crispy, cheesy, and oh-so-delicious, these zucchini chips are a healthier alternative to potato chips and are perfect as a snack or side dish.


Ingredients

  • 2 medium zucchinis, thinly sliced (about 1/4 inch)
  • 1 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

1. Preheat the Oven

  • Preheat to 425°F (220°C).
  • Line a baking sheet with parchment paper or grease it lightly with olive oil.

2. Prep the Zucchini

  • Wash and slice the zucchinis into thin, uniform rounds.
  • Pat dry with a paper towel to remove excess moisture.

3. Season

  • In a large bowl, toss zucchini slices with olive oil.
  • Add Parmesan, salt, and pepper, tossing again to coat evenly.

4. Bake

  • Arrange zucchini slices in a single layer on the baking sheet. Avoid overlapping.
  • Bake for 15-20 minutes, or until golden and crispy. Watch closely to prevent burning.

5. Serve

  • Let cool slightly on the baking sheet for extra crispiness.
  • Serve warm as a snack or side dish.

  • Herbs: Add dried basil, oregano, or thyme for an herby flavor.
  • Spicy Kick: Sprinkle with red pepper flakes or cayenne.
  • Extra Crispy: Use very thin slices, pat them dry thoroughly, and broil for the last 1-2 minutes.
  • Air Fryer Option: Cook at 400°F (200°C) for 8-10 minutes, flipping halfway.
